BERRY BL AST
First, prepare the house-made ingredients. Then, make the cocktail.
Pineapple-Infused Tequila
3.
Lightly crush the berries with the back of a spoon.
Ingredients
4.
Simmer for 5 minutes, then remove the pan from
the heat.
5.
Allow the mixture to steep for 15 minutes.
6.
Strain through a 昀椀ne-mesh strainer. Avoid pressing
too 昀椀rmly on the berries, which can make the syrup
cloudy.
7.
Let the syrup cool completely before transferring it
to a clean jar or bottle.
8.
Refrigerate and use within two weeks.
•
•
1 750-milliliter bottle blanco tequila
2 cups fresh pineapple, peeled and cut into small
chunks
Method
1.
Place the pineapple chunks in a large, clean jar or
sealable container.
2.
Pour the tequila over the pineapple, making sure
the fruit is completely covered.
3.
Seal the container and refrigerate for 24 hours.
4.
Taste the tequila. For a stronger pineapple 昀氀avor,
allow it to infuse for up to another 24 hours. (Do
not infuse for longer than 48 hours – the pineapple
can begin to make the tequila taste bitter.)
5.
Strain through a 昀椀ne-mesh strainer, pressing gently
on the pineapple to release the liquid.
6.
Discard the fruit and return the infused tequila to a
clean bottle.
7.
Store refrigerated until ready to use.
